Serves 4

INGREDIENTS

4 slices of cubed day-old bread
2 eggs
230ml milk
50g granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
75g cup raisins or chopped nuts (optional)
Maple syrup or caramel sauce for drizzling

 

 

METHOD

1. Preheat your air fryer to 160°C

2. In a bowl, whisk together eggs, milk, sugar, vanilla extract, cinnamon, and nutmeg.

3. Add the cubed bread to the egg mixture, ensuring all the bread is coated. Let it sit for 10 minutes to allow the bread to soak up the liquid.

4. If using, fold in raisins or chopped nuts into the bread mixture.

5. Lightly grease an oven-safe dish or use individual ramekins, then transfer the bread mixture into the dish

6. Place the dish in the air fryer basket and air fry for 20-25 minutes until the bread pudding is set and golden brown.

7. Drizzle with maple syrup or caramel sauce before serving.

 

HANDY TIP

For added richness, you can substitute some of the milk with heavy cream in the egg mixture for a creamier texture in the bread pudding.
