Makes 4

INGREDIENTS
200g cooked turkey breast, shredded
150g stuffing
100g cheddar cheese, grated
8 slices of bread
50g butter, softened
Cranberry sauce (optional)
Salt and pepper to taste

 

METHOD

1. : If the stuffing isn't already prepared, follow the package instructions to make it. Let it cool before using.


2. Lay out 4 slices of bread. Spread a thin layer of softened butter on one side of each slice.


3. On the non-buttered side of the bread, layer the shredded turkey, stuffing, and grated cheddar cheese evenly across the 4 slices


4.Place the remaining 4 slices of bread on top, creating 4 sandwiches.


5. Preheat a sandwich press or a frying pan over medium heat. If using a frying pan, add a little butter to the pan. Place the sandwiches in the press or pan and cook for about 4-5 minutes on each side, or until golden brown and the cheese is melted.

6. ORemove the sandwiches from the heat and let them cool for a minute. Cut them diagonally and serve hot. You can serve them with cranberry sauce on the side for dipping, if desired.

7. Serve the festive turkey stew hot, garnished with fresh parsley if desired.


HANDY TIP

Feel free to add extras like a layer of cranberry sauce or a spread of mayonnaise for extra flavour. You can also include some sliced tomatoes or greens like rocket or spinach for freshness.
