INGREDIENTS

4 garlic cloves chopped
2 medium onions chopped
1 green chilli thinly sliced
1 thumb piece ginger grated
700g skinless chicken thighs cut into pieces
400ml can coconut milk
400ml can chopped tomatoes
2 tbsp tomato purée
2 bay leaf
1 tsp cumin
1 tsp ground coriander
1 tbsp garam masala
1 tsp turmeric
Handful fresh coriander (garnish)
Half red chilli thinly sliced (garnish)

METHOD

1. Add all of the ingredients to the slow cooker and stir to ensure that the spices are mixed.

 

2. Cook on high for 4 hours or low 6-8 hours. 

 

3. Garnish the curry with coriander and chill whilst still in the slow cooker.

 

TIP

Serve with pilau rice and a warm garlic naan bread.
