Makes 9

INGREDIENTS
100g dark chocolate, chopped
100g unsalted butter
150g granulated sugar
2 eggs
5ml vanilla extract
75g all-purpose flour
15g cocoa powder
5ml peppermint extract
Crushed candy canes for topping

 

METHOD

1. Preheat the air fryer to 160°C.

2. In a heatproof bowl, melt the dark chocolate and butter together, stirring until smooth.


3.Remove from heat and whisk in granulated sugar.


4. Beat in eggs one at a time, then add vanilla extract.

 

5.Sift in flour and cocoa powder, mix until just combined.
 

6. Stir in peppermint extract.
 

7. Pour the batter into a greased baking pan that fits into the air fryer.
 

8. Air fry for 18-20 minutes until the edges are set and a toothpick inserted into the center comes out with a few crumbs.
 

9.Let the brownies cool in the pan before cutting. Sprinkle crushed candy canes on top before serving.


HANDY TIP

For extra indulgence, serve these brownies with a dollop of whipped cream and a drizzle of chocolate sauce.
