Serves 6

INGREDIENTS
200g mixed dried fruit (raisins, sultanas, currants)
100ml dark rum or brandy
125g unsalted butter, softened
100g brown sugar
2 eggs
150g self-raising flour
5ml mixed spice (cinnamon, nutmeg, cloves)
30ml milk
Icing sugar for dusting

 

 

METHOD

1. In a bowl, soak the mixed dried fruit in dark rum or brandy for at least 1 hour.

2. In another bowl, cream together softened butter and brown sugar until fluffy.


3. Beat in eggs one at a time.


4. Gradually fold in the flour and mixed spice. Then stir in the soaked dried fruit and milk until combined

5.Preheat the air fryer to 160°C.

6. Grease a heatproof dish that fits into your air fryer and pour in the pudding mixture.

7. Air fry for 20-25 minutes until a skewer inserted into the centre comes out clean.

8. Let it cool slightly, then dust with icing sugar before serving.

Serve this Christmas pudding cake warm with custard or vanilla ice cream for a delightful dessert.
