INGREDIENTS

4 x 120g salmon fillets 
2 tbsp good quality mayonnaise
For the crumb
40g Panko or dried white breadcrumbs
5g fresh mint, finely chopped
5g fresh coriander, finely chopped
1 tbsp olive oil
1 small orange, zest only
salt and black pepper
olive oil spray


METHOD

  1. Place the salmon, skin side down, on an air flow tray lined with parchment paper and season with salt and pepper. Spread the mayonnaise evenly over the four salmon fillets.
  2. Place the crumb ingredients into a bowl and mix well.      
  3. Pile the crumb evenly on top of the salmon fillets and press down firmly. Spray lightly with olive oil.
  4. Place the salmon on the middle shelf of the air fryer, set the temperature to 180C and bake for 18 - 20 minutes until the salmon is cooked and the topping is golden.
