INGREDIENTS
100g popcorn kernels
200g rolled oats
75g honey or maple syrup
75g nut butter (peanut, almond, or your choice)
50g coconut oil, melted
50g chopped nuts (e.g., almonds, pecans)
50g dried fruits (e.g., raisins, apricots), chopped
50g dark chocolate, chopped
1 teaspoon vanilla extract
A pinch of salt
METHOD
1. Pop the popcorn kernels using an air popper or stovetop popping. Let the popcorn cool.
2. Place the popped popcorn in a food processor and pulse a few times until you have a coarse popcorn powder. Set aside.
3. In a large mixing bowl, combine the crushed popcorn, rolled oats, honey (or maple syrup), nut butter, melted coconut oil, chopped nuts, dried fruits, dark chocolate, vanilla extract, and a pinch of salt. Mix until all ingredients are well combined.
4. Line a square or rectangular baking pan with parchment paper. Transfer the mixture into the pan and press it down firmly using a spatula or the back of a spoon to create an even layer.
5. Place the pan in the refrigerator and chill for at least 2 hours or until the granola bars are set.
6. Once the granola mixture has set, remove it from the refrigerator. Lift the parchment paper to easily transfer the block of granola to a cutting board. Cut into bars of your desired size.
7. Serve the popcorn granola bars as a nutritious and delicious snack.
HANDY TIP
Experiment with different add-ins, such as seeds (chia, flax, sunflower), dried coconut, or dried berries, to customize the flavour and texture.
Drizzle melted chocolate over the top of the bars for an extra indulgent touch.
To keep the granola bars fresh, store them in an airtight container in the refrigerator. They can also be individually wrapped for a convenient on-the-go snack.
