INGREDIENTS
250g block hard mozzarella
30g flour
1 medium egg, beaten
½ tsp dried mixed Italian herbs
60g dried white breadcrumbs
1 tbsp vegetable oil
Vegetable oil spray
METHOD
1. Slice the mozzarella lengthways into three evenly sized slices then cut each slice into four long sticks.
2. Place the flour, egg and breadcrumbs into three shallow bowls. Season the flour and drizzle a tbsp of oil and the herbs over the breadcrumbs and mix well with your hands, rubbing the oil into the crumbs.
3. Dust the mozzarella in the flour, then the egg, then the breadcrumbs. Transfer to a cling film lined tray and pop in the freezer for at least two hours.
4. Set the temperature to 180C and preheat the air fryer for 5 minutes. When ready to cook spray the mozzarella sticks on all sides with oil then place on two air flow racks and cook for 6-7 minutes until crisp and golden. Carefully remove from the rack with a fish slice and allow to cool slightly before serving as the cheese will be very hot.
TIP
Serve as a sharing plate along with a lemon and garlic mayo dip.
