30 MINS
8 HOURS AND 30 MINS
4-6
@tower_housewares
INGREDIENTS
1.2kg Brisket
2 tbsp vegetable oil
2 large onions
4 tbsp plain flour
500ml golden ale
1 tbsp yeast or beef extract
1 tbsp dark brown soft sugar
1 tbsp balsamic vinegar
½ bunch of thyme
2 bay leaves
500ml hot beef stock
2 tsp cornflour
METHOD
STEP 1 > Select the Sear/Sauté function on your multi cooker and heat 1 tbsp of the oil.
STEP 2 > Season the brisket generously with salt and pepper, then brown it all over (about 8–10 mins). Remove and set aside.
STEP 3 > Add another drizzle of oil if needed, then cook the onions with a pinch of salt for about 10–12 mins, stirring occasionally, until lightly golden.
STEP 4 > Sprinkle over the flour and stir well to coat.
STEP 5 > Pour in the ale, stirring to scrape up any browned bits from the base of the pot. Let it bubble for 2 mins.
STEP 6 > Stir in the yeast/beef extract, sugar, and vinegar.
STEP 7 > Return the brisket to the pot, add the bay leaves and thyme, and pour in just enough hot stock so the brisket is half submerged.
STEP 8 > Close the lid, switch to Slow Cook – Low and cook for 7–8 hours, or 4 hours on High, until the beef is tender enough to pull apart easily.
STEP 9 > Carefully remove the brisket and keep it covered to stay warm.
STEP 10 > Select Simmer/Reduce (or Sear/Sauté if your model doesn’t have a reduce function) and bubble the sauce for 10–15 mins until thickened.
TIP
Shred leftover brisket and serve in soft rolls with gravy or barbecue sauce for an easy next-day dinner.
