INGREDIENTS
1 1/2 tsp smoked paprika
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
45g parmesan cheese 
1 tbsp cornstarch
2 tbsp olive oil
Chopped parsley for servin
Spicy Mayonnaise:
1/2 cup mayo
2-3 teaspoons sriracha
Squeeze of lemon juice

For the Spicy Mayonnaise :

1/2 cup mayo
2-3 tsp sriracha
Squeeze of lemon juice

 

METHOD

1.    Peel the carrots and trim the root and ends. Cut them in half crosswise. 


2.    Cut both pieces of the carrot in half lengthwise. You’ll need to cut the top portion of the carrot in half lengthwise again because it’s thicker. Even sized carrots are important for even cooking.


3.     Mix the seasonings and parmesan cheese in a small bowl.


4.     Place the carrots in a large bowl and sprinkle the cornstarch on top. Toss to coat the carrot sticks. Drizzle them with olive oil and sprinkle the seasoning on top. Use your hands to toss the carrots in the seasoning and cheese until they’re combined.

 

5.     Place the carrots in an even layer in the air fryer basket. Air fry for 16-18 minutes, until they’re fork-tender and golden brown. You may need to work in batches to fit all of the carrots without overcrowding the air fryer.


6.     While they’re baking, mix together the mayonnaise ingredients. Cool slightly and serve with chopped parsley and the dipping sauce.

TIP

Serve the carrot fries as a side dish alongside your favorite main course. They pair well with burgers, sandwiches, grilled chicken, or fish. 

Top the cooked carrot fries with your favorite loaded potato toppings such as melted cheese, crispy bacon bits, chopped green onions, and a dollop of sour cream for a hearty and satisfying treat.
