Serves 6

INGREDIENTS
250g all-purpose flour
50g granulated sugar
1 tablespoon baking powder
1/4 teaspoon salt
Zest of 1 orange
60g cold unsalted butter, cubed
120ml cold milk
60g dried cranberries
1 egg, beaten (for egg wash)
Icing sugar for dusting

 

METHOD

1. Preheat your oven to 200°C. Line a baking sheet with parchment paper.
 

2. Mix together he flour, sugar, baking powder, salt, and orange zest. Incorporate cold butter into the flour mixture until it resembles coarse crumbs. Stir in milk and dried cranberries until just combined.


3. Pat the dough into a circle about 2cm thick on a floured surface. Cut it into 6 wedges.



4. Place the scones on the prepared baking sheet. Bake in the preheated oven for 12-15 minutes or until they turn golden brown.

 

5. Allow the baked scones to cool slightly before dusting them with icing sugar. Serve warm.
