INGREDIENTS
4 boneless, skinless chicken breasts (approximately 600g)
1/2 pineapple, cut into bite-sized pieces
1 red onion, cut into bite-sized pieces
1 red pepper, cut into bite-sized pieces
120ml BBQ sauce
2 tbsp olive oil
Salt and pepper, to taste
METHOD
1. Preheat the BBQ to medium heat
2. Cut chicken breasts into bite-sized pieces. Thread the chicken, pineapple, red onion, and red pepper alternatively onto the skewers
3. In a small bowl, mix together BBQ sauce, olive oil, salt, and pepper. Brush the mixture onto the skewers
4. Place the skewers on the grill and cook for 8-10 minutes, or until the chicken is cooked through, turning occasionally and brushing with more of the sauce mixture as you go
TIP
If you enjoy a bit of spice, mix in some chilli flakes or sriracha with the BBQ sauce for a little kick
