INGREDIENTS
2 chicken breasts, sliced
200 ml buttermilk
75 g plain flour
50 g cornflour
150 g crushed ginger biscuits
1 tsp salt
1 tsp black pepper
2 tsbp lime juice
3 tbsp honey
2 tbsp honey

METHOD

1. Add sliced chicken breasts to a bowl and cover with 200ml buttermilk and refrigerate for a minimum of 30 minutes

 

2. Mix 75g plain flour, 50g cornflour, 150g crushed ginger biscuits, 1 tsp each of salt and pepper to make the coating for the chicken. 

 

3. Dip chicken into flour mixture, then place in the air fryer. Add a quick spritz of oil over the chicken to help it turn perfectly golden.

 

4. Add into the air fryer and press the chicken pre-setting

 

5. Mix 3 tbsp honey and 2 tbsp lime juice to make the sauce

 

6.  Serve on a plate with chips and drizzle the sauce over the chicken

 

TIP

Serve the chicken as loaded fries topped with the drizzle, chillies and spring onions.
