INGREDIENTS
1 sheet of ready-made puff pastry
150g leftover turkey or pigs in blankets
100g leftover stuffing
50g leftover cranberry sauce
Chopped brie cheese
1 egg, beaten (for egg wash)
Salt and pepper
1 tbsp fresh herbs
METHOD
1. Roll out the sheet of puff pastry on a lightly floured surface. Cut the pastry into squares or rectangles, depending on the size of the parcels you want to make. A typical size would be around 8x8 cm per parcel.
2. Add the leftover ingredients to the centre of each pastry square, leaving space around the edges.
3. Brush the sides of each pastry parcel with a little beaten egg for a golden, glossy finish.
4. Preheat the air fryer to 180°C. Place the pastry parcels in the air fryer basket in a single layer, ensuring there’s space between them for air circulation.
5. Air fry for 10–12 minutes or until the pastry is golden brown and puffed up.
6. Once the parcels are cooked, remove them from the air fryer and allow them to cool slightly before serving.

Cut into bite-sized pieces and arrange with cheese and charcuterie for a post-Christmas grazing board.
