Serves 6

INGREDIENTS

1 medium butternut squash, peeled, seeded, and cubed
1 onion, chopped
2 cloves garlic, minced
1 tablespoon olive oil
4 cups vegetable broth
1 teaspoon ground cumin
Salt and pepper to taste
2 tablespoons fresh cream (optional)
Chopped fresh parsley for garnish

 

METHOD

1. Preheat your air fryer to 200°C

2. Toss the cubed butternut squash, chopped onion, and minced garlic with olive oil.

3. Air fry for 15-20 minutes until the squash is tender and slightly caramelized.

4. Transfer the roasted vegetables to a blender, add vegetable broth, ground cumin, salt, and pepper. Blend until smooth.

5. Pour the mixture into a pot and simmer for 5 minutes. Stir in fresh cream if desired.

6. Serve hot, garnished with chopped parsley.


HANDY TIP

To enhance the flavour, sprinkle a pinch of smoked paprika on the squash before air frying.
