INGREDIENTS
200g chopped vegetables - such as onions, celery and carrots
300g potatoes, cubed
1 tbsp oil
700ml stock
Crème fraîche
Fresh herbs, to serve
Crusty bread, to serve

METHOD

STEP 1 > Add the vegetables, potatoes, and oil directly to the soup maker. 

STEP 2 > Select the "sauté" function  and cook for a few minutes until the vegetables begin to soften.

STEP 3 > Add the stock to the soup maker, then select the "smooth" soup setting. The soup maker will blend and cook the ingredients, usually in about 20-30 minutes.

STEP 4 > Once done, season to taste. Serve with a dollop of crème fraîche and some fresh herbs. Serve with crusty bread on the side and dip in to enjoy!

TIP

Swap potatoes with sweet potatoes or parsnips for a sweeter flavour.
