INGREDIENTS
2 skinless boneless chicken breasts
4 rashers of smoked streaky bacon
4 tbsp BBQ sauce
80g grated mature cheddar (mixture)
Salt and freshly ground black pepper
Chopped fresh parsley
Spring onions, finely sliced
To Serve:
Chips & Coleslaw

METHOD

1.    Preheat your air fryer to 190°c for 3–5 minutes.


2.    Lightly spray the chicken breasts with olive oil.


3.     Season both sides with salt and pepper.


4.     Wrap each breast with 2 rashers of bacon, securing the ends underneath.

 

5.     Place the bacon-wrapped chicken breasts in the air fryer basket.


6.     Cook at 190°C for 15 minutes, turning halfway through.


7.     After 15 minutes, check the chicken is cooked through (internal temp should be 75°C).


8.     Spoon 2 tablespoons of BBQ sauce over each chicken breast.


9.     Sprinkle generously with cheese.


10.     Return to the air fryer and cook for a further 3–5 minutes, until the cheese is melted and bubbly.


11.     Serve hot, garnished with chopped parsley or spring onions if you like.


12.     Serve with homemade chips and coleslaw on the side.
