INGREDIENTS
60g all purpose flour
2 tsp paprika
½ tsp garlic powder
½ tsp salt
¼ tsp black pepper
1 Large egg beaten
75g breadcrumbs
140g cod fillet cut into strips
To Serve
Tartar sauce
Lemon wedges
Air fryer chips
Mushy peas
METHOD
1. In a small bowl, mix the flour with paprika, garlic powder, salt and black pepper. Place the beaten egg in another bowl and the breadcrumbs in a third bowl.
2. Pat the fish dry using a paper towel. Dredge the fish in the flour mixture, then the egg and finally the breadcrumbs, pressing down lightly until the crumbs stick.
3. Air fry at 200°, turning halfway through until crispy and lightly golden, about 10-12 minutes.
4. Open the basket and check for desired doneness with a fork to see if it flakes off easily. You can return the fish for another 1 or 2 minutes, if necessary.
5. Serve immediately with chips (which are done in the air fryer), mushy peas and tartar sauce.
TIP
Use panko breadcrumbs for a light & crispy coating or use a food processor with leftover bread to create a fine breadcrumb.
