INGREDIENTS
400ml sweetened condensed milk
250ml double cream
3 egg yolks
2 whole eggs
1 tsp vanilla extract
Pinch of salt

 

METHOD

1.     In a mixing bowl, combine the sweetened condensed milk, double cream, egg yolks, whole eggs, vanilla bean paste, and a pinch of salt. Whisk the mixture until smooth and well combined.


2.   Strain the mixture through a fine sieve to remove any lumps.


3.     Divide the strained mixture evenly between six small ramekins.


4.     Place the ramekins in the air fryer basket. Bake at 130°c for 16-20 minutes, until the custards are set at the edges but still have a slight wobble in the middle.

 

5.     Remove from the air fryer and let them cool to room temperature.


6.      Refridgerate the ramekins until the custards are fully set (around 2 hours).

 

7.  Just before serving, sprinkle a thin layer of sugar over the top of each custard. Use a kitchen torch to melt the sugar until it forms a golden, crispy crust. Alternatively, you can place the ramekins under a hot grill or in the air fryer set to its highest setting, but watch closely to avoid burning.

 

8.  Allow the caramelised sugar to harden for a minute or two.

Tip:

Sprinkle some icing sugar over your completed Creme Brulee for some extra flavour!
