
Tower Healthy Quick Dish: Thai Fried Prawn and Pineapple Rice

This week we are bringing a healthy Thai Fried Prawn and Pineapple Rice suitable for all the family! Recommended Appliance: 24cm Forged Frying Pan Total Time to Table: 25 minutes Contains nuts? - 140g pineapple, chopped into small chunks
- 250g frozen prawns, cooked or raw
- Bunch of spring onions
- 2 tsp sunflower oil
- 1 green pepper, chopped into small chunks
- 3 tbsp Thai green curry paste
- 4 tsp soy sauce
- 300g cooked basmati rice
- 2 large eggs, beaten
- 140g frozen peas
- 2-3 limes
- Handful coriander leaves

- Heat a small amount of oil into the frying pan and fry the spring onions for 2 minutes until softened. Stir in the green pepper for 1 minute, then add in the pineapple for 1 minute and finally stir in the soy sauce and green curry paste
- Add in the rice and stir until piping hot and push to one side of the pan, then on the other side scramble the eggs
- Stir the prawns and peas into the rice and eggs and stir for 2 minutes until the prawns are hot and the peas are tender
- Finally, stir in the spring onion, lime juice and coriander
