This time, we’re bringing you a healthy, gluten-free dish of Omelette Pancakes with Tomato and Pepper Sauce, the perfect quick fix for a delicious dish. Ingredients

  • 4 large eggs
  • Handful basil leaves
For the sauce:
  • 2 tsp rapeseed oil
  • 1 yellow pepper, quartered, deseeded and thinly sliced
  • 2 garlic cloves, thinly sliced
  • 1 tbsp cider vinegar
  • 400g can chopped tomatoes

Preparation

  • Begin by making the sauce. Heat the oil in a 28cm Ceramic Coated Frying Pan
  • Add the pepper and garlic to soften them
  • Spoon in the one table spoon of cider vinegar and allow it to sizzle
  • Gently tip in the chopped tomatoes then add a third of a can of water
  • Cover the pan and leave to simmer for 10-15 minutes until the sauce is thick and the peppers are tender
  • Now to make the pancakes. Beat one egg with one teaspoon of water and seasoning
  • Heat on a smaller frying pan, like the 20cm Ceramic Coated Frying Pan, with a drop of oil
  • Gradually add the egg and cook for a further 1-2 minutes until the mixture resembles a thin pancake
  • Gently lift onto a plate and cover with foil. Repeat this process with the remaining three eggs
  • Roll up the pancakes onto warm plates, spoon over the sauce and gently scatter with basil

To Serve
