Tower Healthy Quick Dish: Curried Cod

This week we’ve been scouring the recipe archives here at Tower HQ to bring you a brand new recipe as part of our Tower Healthy Quick Dish Series. This week we are bringing a healthy Curried Cod dish suitable for all the family! Recommended appliance: 28cm Ceramic Coated Saute Pan Total Time to Table: 35 minutes Contains Nuts? No Suitable for Vegetarians? No Serves: 4 Chopped onion final Ingredients
  • 1 onion, chopped
  • 1 tbsp oil
  • 2 tbsp medium curry powder
  • Grated ginger
  • 3 garlic cloves, crushed
  • 2 x 400g cans chopped tomatoes
  • 400g can chickpeas
  • 4 cod fillets (about 125-150g each)
  • Zest 1 lemon, then cut into wedges
  • Handful coriander, chopped
Cod and lemon final Preparation
  • Heat the oil into the large saute pan – the Tower 28cm Ceramic Coated Saute Pan is the perfect essential for this dish
  • Cook the onion over a high heat for a few minutes then stir in the curry powder, ginger and garlic for a couple more minutes
  • Stir in the tomatoes, chickpeas and seasoning
  • Cook for 8-10 minutes until slightly thickened then top with cod
  • Cover and cook for another 5-10 minutes until the fish is cooked through
  • Squeeze over the lemon zest and coriander, then serve with the lemon wedges
