
Tower Healthy Quick Dish: Creamy Pumpkin and Lentil Soup

This week we are bringing a healthy Creamy Pumpkin and Lentil Soup suitable for all the family! Recommended appliances: 28cm Forged Fry Pan and 300W Stick Blender Total Time to Table: 50 minutes Contains Nuts? No Suitable for Vegetarians? No Serves: 4
- 2 onions, chopped
- 1 tbsp olive oil, plus 1 tsp
- 2 garlic cloves, chopped
- 800g chopped pumpkin flesh with the seeds
- 100g split red lentil
- ½ small pack thyme
- 1L hot vegetable stock
- Pinch of salt and sugar
- 50g crème fraiche

- Heat the oil into the large fry pan – the Tower 28cm Forged Fry Pan is the perfect essential for this dish
- Fry the onions until softened and starting to turn golden
- Stir in the garlic, pumpkin flesh, lentils, thyme and hot vegetable stock
- Season, cover and simmer for 20-25 minutes until the lentils and vegetables are tender
- Wash the pumpkin seeds and remove any flesh and dry
- Heat the 1 tsp oil in a non-stick pan and fry the seeds until they jump and pop
- Stir frequently covering the pan in between to keep them in
- When the seeds look nutty and toasted, add a pinch of salt and sugar and stir
- Mix the cooked pumpkin mixture with a hand blender (Tower 300W Stick Blender is recommended) until smooth and add crème fraiche
