Tower Healthy Quick Dish: Chicken and Chorizo Jambalaya

This week we are bringing a healthy Chicken and Chorizo Jambalaya dish suitable for all the family!

- 4 chicken thighs
- 1 tbsp olive oil
- 1 onion, diced
- 1 red pepper, thinly sliced
- 75g chorizo
- 1 tbsp Cajun seasoning
- 2 garlic cloves, crushed
- 250g long grain rice
- 400g can plum tomato
- 350ml chicken stock
- 1 lime
- Heat the oil into the large saute pan (the Tower 28cm Ceramic Coated Saute Pan is the perfect essential for this dish) and brown the chicken for 5-8 minutes until golden, then remove and set aside.
- Tip in the onion and cook for 3-4 minutes until soft and add the pepper, garlic, chorizo and Cajun seasoning and cook for a further 5 minutes.
- Stir the chicken back in with the rice, then add the tomatoes and stock. Cover and simmer for 20-25 minutes until the rice is tender. Squeeze in the lime and serve!
