It’s time for another one from the archives, this time from a recipe book that accompanied the Tower Pressure Cooker sold throughout the late-90s. This week’s Retro Recipe Revival sees us packing our bags and gearing up to go back to school with this classic schooldays pud…

  • 175g unsalted butter (plus extra for greasing)
  • 175g golden caster sugar
  • 175g self-raising flour
  • x 3 tbsp golden syrup (plus extra for drizzling)
  • x3 large eggs, beaten
  • 2 tbsp milk
  • x 1 tbsp fresh white breadcrumbs
  • Splash brandy (optional)
  • Zest of x 1 lemon


  • Heavily grease a 1 litre pudding basin with a small knob of butter, then in a small bowl, mix the golden syrup with the breadcrumbs and brandy and tip into the pudding basin.
  • Beat the butter together with sugar and zest until fluffy, then add eggs gradually. Fold in the flour, then finally add the milk. You can do this manually but you can save much time and effort by using the Tower 300W Stainless Steel Hand Mixer.
  • Carefully spoon the mix into the pudding basin, then cover with a double layer of buttered foil and baking paper, making a pleat in the centre to allow the pudding to rise.
  • Next, tie the foil securely with string, then place in to your pressure cooker trivet and then pour in 500ml of water boiled in a kettle.
  • Cover with the pressure cooker lid and leave for 15 minutes to allow the pudding to steam for a little. Replace the lid then bring up to high pressure and steam for around 35 minutes.
  • Using the natural release method, release the pressure slowly before turning the pudding out onto a serving dish.
  • Recreate those heady schooldays buy serving with a huge dollop of clotted cream, a couple of ice cream balls or lashings of custard. Eating whilst wearing short trousers/gingham dress entirely optional.
