Perk Up Your Popcorn - 3 Healthy Popcorn RecipesWe all know what it’s like. That 3pm office slump where you’re craving a snack to give you a bit of a boost for those final two hours and the vending machine seems like the only thing that will get you through. In times like that it’s easy to abandon your New Year healthy eating resolutions in favour of a big bag of crisps, but we have a healthy alternative! Packed with healthy whole grains, vitamins E and B and more antioxidants than you can shake a stick at, the humble corn kernel is not only a much healthier way to snack but its versatile too! Not just a sugary treat to enjoy while watching the latest Hollywood blockbuster, it couldn’t be simpler to perk up your popcorn with a variety of healthy toppings. The Basics There’s a couple of ways that you can pop your own popcorn at home without the need for the popcorn maker. Grab yourself a large heavy bottomed saucepan with a secure lid and drizzle in around 2 tsp. vegetable oil. Add around 50-100g of popcorn kernels to the pan, cover and cook undisturbed over a medium to low heat until you start to hear vigorous popping. Once the popping starts to slow down, give the pan a good shake and remove from direct heat. The kernels will continue to pop even off of the heat so once there is a 2-3 second gap between pops, carefully remove the lid and transfer into a bowl. For an even easier method, place the kernels into a microwavable bowl and place a microwavable plate on the top to seal. Heat on high for around 2-3 minutes or until you start to hear the popping slowing. Dark Chocolate & Sea Salt As we all know, opposites attract and this bitter sweet recipe with a touch of savoury is perfect to get those taste buds tingling. Melt a bar of dark chocolate (we recommend a bar with around 80% cocoa content) and pour over your plain popcorn. Give it all a good shake to make sure that each kernel is lightly coated, then sprinkle on a good helping of flakey sea salt. Not only does it look great, but it’s perfect to satisfy both sweet and salty cravings! Cinnamon Churro Bring a taste of Mexico to your snacktime with these cinnamon coated kernels. Simply coat your plain popcorn in a mixture of melted butter with a little vanilla extract before sprinkling generously with cinnamon sugar (just mix 60g caster sugar with 2 ½ tablespoons of ground cinnamon and stir to combine). A spiced sweet treat! Parmesan and Rosemary The perfect alternative to crisps, this salty, savoury option uses all natural ingredients to satisfy those savoury cravings without a mid-afternoon dash to the snack cupboard. Drizzle the popcorn in a little olive oil, sprinkle on 2 sprigs of fresh rosemary, ½ tablespoon of garlic salt and black pepper and stir well. Grate over a good handful of fresh parmesan and shake well to coat. Not only is this recipe great as a day to day snack, it would make the perfect nibble for your next dinner party!
