
How To: Wimbledon Picnic
With Wimbledon already underway we wanted to bring the joy of the tennis court into your home with a Wimbledon inspired picnic, made up of a variety of tasty treats, perfect for when you are hosting a tennis themed party with friends and family. We all know that Wimbledon is renowned for its exquisite picnic food with ample servings of strawberries and cream all washed down with a refreshing glass of Pimms and Lemonade, garnished with berries, cucumber and mint leaves. So with this in mind we thought we’d share some of the Wimbledon classics with a slight twist. Each of these tasty treats are extremely easy to make, providing you with the perfect summer recipe for you to enjoy during each match, bringing that Wimbledon atmosphere to the comfort of your own home.
- Mix one part Pimms with three parts lemonade
- Fill ice lolly moulds with the Pimms and lemonade and add in a mixture of berries (e.g. strawberries, blueberries, raspberries etc.), mint leaves and cucumber
- Put the lid with attached stick on top of the tray and freeze until set

- To create the perfect meringue simply pre-heat the oven to 140°C. Then using 4 eggs, separate the egg whites and add to a large mixing bowl and whisk into soft peaks
- Whilst continuing to whisk, slowly add in caster sugar until you have a stiff meringue texture. Then whisk in vanilla extract until combined
- Add the meringue onto a baking sheet using a dessert spoon and bake for 1 ½ - 1 ¾ hours until the meringues sound crisp when lightly tapped underneath. Then leave to cool
- Whip double cream into soft peaks and fold in strawberries and other berries if you wish
- Once it has set, crush the meringue and fold n with the cream and strawberries and then decorate with more strawberries or other berries if desired

- Create your hollandaise sauce by adding lemon juice and vinegar into a small bowl, adding in egg yolks and whisking until light and frothy
- Place the bowl over a pan of simmering water and whisk until the mixture thickens, gradually adding butter whilst continuing to whisk
- Heat in the microwave for 15-20 seconds and whisk again
- Poach 2 eggs ready for serving
- Place each half on an English Muffin on a plate, lightly butter and top with smoked salmon and the poached eggs and generously drizzle with hollandaise sauce and sprinkle with a pinch of chives

- Mix cookie crumbs together in a bowl with melted butter and spoon the into small mason jars
- In a bowl, beat together cream cheese and icing sugar until light and blended and add melted chocolate, vanilla extract and a dash of red food colouring
- Spoon into mason jars and top with chocolate sprinkles and refrigerate
