There’s nothing better than enjoying a lovingly prepared Christmas dinner with friends and family and then following that up over the strange, timeless period betwixt Christmas Day and New Year with all manner of cheese, chutneys, crackers, mince pies, mulled w…well, you get the gist.

The only downside to all this however is the amount of leftovers that your accrue, meaning that you often end up eating derivatives of the dishes you enjoyed on Christmas day for what seems like weeks after. Leftover Fish

As delicious as it may be on Christmas morning, smoked salmon is quite expensive – so you’ll want to make sure you use all that you buy. Prevent leftover fish from going into the bin by making these quick and tasty smoked salmon rolls.

Preparation

  • Mix the cream cheese and crème fraîche together in a mixing bowl.
  • Add salt and pepper to taste.
  • Spread the mixture on the four slices of smoked salmon.
  • Roll and serve chilled.

Leftover Veg

There’s a good chance that you’ll have quite a bit of meat and herbs leftover from the festivities, so rather than chowing down on boring turkey for several post-Christmas days, whip up this delicious salsa to jazz up roast chicken, turkey and, well pretty much anything!

Preparation

  • Roughly chop whatever herbs you have left (stems included) – you can either do this by hand using a sharp knife or plump to save time by getting yourself a Tower Dual Bladed Mini Chopper.

If you’re bored with endlessly shovelling foil-wrapped chocolates into your mouth, why not use the ones left rattling round the bottom of the tin to make these awesome Christmas Chocolate Brownies?

Preparation

  • Preheat the oven to 160°C and line a 40cm baking tray with baking paper.
  • Place the chocolate and chopped butter in a microwave-safe bowl and heat in the microwave for one minute on a high setting.
  • In another bowl, whisk the sugar with the eggs until light and creamy.
  • Add the melted chocolate to the whisked eggs, add the vanilla extract and mix thoroughly. You can do this by hand or save some time by using something like the Tower 300W Stick Blender.
  • Now sift in the flour and cocoa powder and mix together well. Add the chopped leftover Christmas chocolates and mixed spice.
  • Using a spatula, transfer the chocolate mixture into the baking tin.
  • Place in the preheated oven and cook for around 20 – 25 minutes. To check if they’re done, push a clean knife into the middle – if it comes out clean, they’re fully cooked.
  • Remove from the oven and cool on a wire rack for around 10 minutes before cutting into squares and serving with a dollop of vanilla ice cream.
