This week we’ve been scouring the recipe archives here at Tower HQ to bring you a healthy take on a family favourite- it’s Ultra-Lean Spaghetti Bolognese.

Ingredients

1 tbsp olive oil

200g/7oz lean steak mince

1 onion, finely chopped

4 large mushrooms, sliced

1 carrot, grated

1 400g/14oz tin tomatoes, chopped

230ml/8fl oz vegetable stock

2 tbsp tomato purée

½ tsp Worcestershire sauce

1 tsp freshly ground black pepper

300g/10½oz wholewheat spaghetti

2 tbsp chopped fresh parsley

Method

Heat a drizzle of olive oil in a sauté pan like the Tower 28cm Saute Pan on a medium heat. Add the onion and the minced beef and fry for around five minutes, stirring occasionally, until the mince has browned and the onions are soft.

Add the sliced mushrooms and finely chopped carrot, cook for 1 minute, then add tinned tomatoes, vegetable stock, tomato purée, Worcestershire sauce and freshly ground black pepper. Bring to the boil, then reduce the heat and allow to simmer for 15-20 minutes or until the sauce has thickened.

Fill a large saucepan with salted boiling water, then add the wholemeal spaghetti and cook according to packet instructions. When cooked, drain and serve in dishes.

Serve the Bolognese sauce on top and sprinkle generously with parsley.
