Fantastic Father's Day Feast: Grilled Steak & Sweet Potato Fries Main

Father’s Day is just around the corner (Sunday 19 June) and if you haven’t treated your doting dad to a lovingly chosen gift or planned another way to show your gratitude for being a fabulous father, then don’t panic as at Tower HQ we’ve got you covered. Our Fantastic Father’s Day Meal recipes are here with three delicious how-to's designed to show you how to rustle up a delicious three course meal for dad in just a few easy steps. We kicked things off earlier in the week by showing you how to make our Creamy Garlic Mushroom starter so today we move on to the main with a healthier take on steak and chips, it’s Grilled Steak and & Sweet Potato Fries. Total time to table: 45 minutes Total Cost Per Serving: £2.55 Contains Nuts? No Suitable for Vegetarians? No Serves: 4

Ingredients

4 x small sweet potatoes (cut into strips) 4 x minute steaks 2 tbsp olive oil 2 tsp dried oregano Handful of parsley (finely chopped) 1 lemon (juiced and zested) 1 large garlic clove (crushed) 2 tbsp white wine vinegar Sweet Potato

Preparation

  • Pre-heat your oven to 220°c and lightly coat the sweet potatoes with 2 tsp of olive oil, half the oregano and some seasoning, then arrange in a single layer on a baking tray lined with baking parchment, cook for 35 minutes.
  • Combine the remaining oil, parsley, lemon zest and juice, garlic, vinegar and oregano with seasoning then brush half over the steaks, saving the other half to be used as a dressing. On a pre-heated grill like the Tower Cerastone Reversible Grill fry the marinated steak for for 30 seconds on each side.

Serving

  • Serve the steak immediately alongside the sweet potato fries with the dressing in a small pot for dipping.
