
Fantastic Father's Day Feast: Grilled Steak & Sweet Potato Fries Main

We kicked things off earlier in the week by showing you how to make our Creamy Garlic Mushroom starter so today we move on to the main with a healthier take on steak and chips, it’s Grilled Steak and & Sweet Potato Fries. 4 x small sweet potatoes (cut into strips) 4 x minute steaks 2 tbsp olive oil 2 tsp dried oregano Handful of parsley (finely chopped) 1 lemon (juiced and zested) 1 large garlic clove (crushed) 2 tbsp white wine vinegar
Preparation
- Pre-heat your oven to 220°c and lightly coat the sweet potatoes with 2 tsp of olive oil, half the oregano and some seasoning, then arrange in a single layer on a baking tray lined with baking parchment, cook for 35 minutes.
- Combine the remaining oil, parsley, lemon zest and juice, garlic, vinegar and oregano with seasoning then brush half over the steaks, saving the other half to be used as a dressing. On a pre-heated grill like the Tower Cerastone Reversible Grill fry the marinated steak for for 30 seconds on each side.
Serving
- Serve the steak immediately alongside the sweet potato fries with the dressing in a small pot for dipping.
