Quiche on a server with salad

We’re feeling #ThrowbackThursday this week at Tower HQ, so we’re bringing you a recipe for the ultimate retro picnic/party food – a delicious quiche, made quick, easy and mess free thanks to the Tower Pie Maker!

 

#TowerTip: to cook a quiche in an Electric Pie Maker, add the pastry and the fillings with the machine still cold – switch it on and cook for half an hour, then open the lid, turn off and leave for 5 minutes before removing for perfectly cooked pastry and a set filling!

 

Ingredients:

For the Pastry:

170g Plain Flour

85g Chilled Butter (cubed)

3 Tbsp Cold Water

For the Filling:

2 Large Eggs

250ml Single Cream

125g Hard Cheese (e.g. Cheddar, Gruyère), Grated

1 Onion, Peeled and Diced

6 Rashers Unsmoked Streaky Bacon, cut into strips

Handful of Broccoli

 

Instructions:

Sift the flour and salt into a large mixing bowl. Add the butter and using your fingertips, rub the flour and butter together. Add the water and work the dough with your hands. Gently pack it together. Wrap the pastry in cling film and leave it in the fridge for half an hour before use, or overnight.

Roll the dough out to about 5mm thickness on a lightly floured surface and use the large side of the pastry cutter to create the base for your quiche. Place this into the pie maker.

Cook the onion and bacon in a frying pan over medium heat until the onion is golden and the bacon is cooked, around 8 minutes.

In a bowl, whisk together the eggs and cream, then add the cheese, broccoli, bacon and onion and stir well. Season with salt and pepper to taste.

Pour the filling mixture into the mould, ensuring you fill as close to the top as possible. Close the lid then switch the pie maker on and cook for 30 minutes (from cold), then turn the machine off and open the lid. Leave the quiche for a further 5 minutes before removing.

Serve hot or cold.
