1 medium butternut squash, peeled and medium dice

2 sweet potatoes, peeled and medium dice

1 red onion, peeled and medium dice

2 cloves garlic, peeled and crushed

1 red chilli, chopped including seeds

Tip of tspn chilli flakes

1ltr vegetable stock, fresh or cubed

¼ tspn toasted coriander seeds

¼ tspn toasted cumin seeds

Salt and freshly ground black pepper for seasoning



Toast coriander and cumin seeds in a dry pan on the stove, before grinding or crushing

Add the butternut squash, sweet potato, red onion, garlic, chillies and crushed seeds to the Tower Soup Maker. Then add stock up to the maximum line before turning on the soup maker and setting to the smooth function for 21 minutes

At the end of the cycle, check the seasoning and adjust to taste.


Serve with a swirl of double cream or fromage fraise and add a sprinkling of fresh thyme.
